While we serve you quickly, our preparation is patient. We’ve optimized our kitchen on W Bowles Ave to honor time-tested methods while focusing on modern efficiency. 
  • The Overnight Broth: The heart of our kitchen never stops. Every evening, Tan and the team prepare our signature beef and vegan broths, letting them simmer overnight. This slow-steeping process develops the rich, clear, and nutrient-dense base our community loves, ready for you the moment we open. 
  • Fresh-Baked Daily: We believe the perfect Banh Mi starts with the bread. Our baguettes are baked fresh every morning to ensure that signature golden crunch and airy center in every sandwich. 
  • Authentic & Inclusive: Our commitment to quality extends to everyone. Our vegan broth isn't an afterthought; it’s treated with the same respect as our beef base, using charred vegetables and traditional spices so our plant-based friends get a full-flavor experience.
